EAT // Sweet Potato and Kipfler Salad

I recently enjoyed a lovely long lunch at Lisa Madigan's cottage. I loved it so much I asked for the recipe and took a few pics. Here it is. Oh and nothing beats our traditional shot of iced Toby's Estate coffee before our lunch! 

S W E E T   P O T A T O   &   K I P F L E R
P O T A T O   S A L A D

kipfler potatoes
purple sweet potato
free range bacon
tiny capers
shallots
celery
dill
mint
oregano
flat leaf parsley
evoo - a little lug
greek style yoghurt - a couple of teaspoons
lemon juice - just a squeeze
white wine vinegar - a good splash or two
salt & pepper

cook sliced kipflers & sweet potato { skins on } on the stove top until tender
{  I use different saucepans so the colour doesn't leach }
slice up shallots
slice up celery
roughly cut herbs
finely slice up bacon & fry until just crispy
gently fold all ingredients together

I have recently taken to mixing my dressings in my salads, so really just throwing everything in together & then adjusting if needed to taste, or of course, mix your dressing & then fold through the salad.

Every time I make this it's different, I may add fennel, or finely slice the potatoes & make them crispy in the oven, perhaps use crispy proscuito & crumble that over the top, always amped up on the fresh herbs though.
